Hot & Sour Soup

Ingredients

  • 225 g unpeeled raw shrimps/prawns
  • 2 lemon grass
  • 1 1/2 L vegetable stock
  • 4 kaffir lime leaves
  • 2 slices ginger root peeled
  • 4 tbsp fish sauce
  • 4 tbsp fresh/bottled lime juice
  • 2 garlic cloves minced/crushed
  • 1-2 green onions chopped
  • 1 fresh chili cut into strips, seeded if youd like it less spicier
  • 115 g oyster mushrooms sliced/chopped
  • Cilantro for garnish

Instructions

  • Peel shrimps and set aside
  • Put shells in large pan
  • Bruise lemon grass and add it to the pan along with stock, ginger and lime leaves, bring to boil and simmer for 20 mins
  • Strain into another pan/pot, discard shells, lime leaves and ginger
  • Add in fish sauce, lime juice, garlic, green onions, chili and mushrooms into the stock and bring to boil and simmer for 5 minutes
  • Add peeled shrimps to the broth and cook for another 3 mins
  • Serve immediately, garnished with cilantro
  • Enjoy :)
