Peel shrimps and set aside
Put shells in large pan
Bruise lemon grass and add it to the pan along with stock, ginger and lime leaves, bring to boil and simmer for 20 mins
Strain into another pan/pot, discard shells, lime leaves and ginger
Add in fish sauce, lime juice, garlic, green onions, chili and mushrooms into the stock and bring to boil and simmer for 5 minutes
Add peeled shrimps to the broth and cook for another 3 mins
Serve immediately, garnished with cilantro
