Preheat oven 350 F
Grease and flour a 9.5 inch square pan (depending on how big you'd like to make your cake, the recipe can be doubled, if not prepare batter and bake cake twice)
Beat eggs, oil, sugar and 2 teaspoons vanilla.
Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in walnuts.
Pour into prepared pan and bake for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely before proceeding.
