Cookie Platter

Ingredients

Jeweled Christmas Tree Cookies

  • 1 1/2 c flour
  • 1/3 c shortening
  • 3 tbsp sugar
  • 1 aquafaba egg
  • 2 1/2 tbsp lemon juice

 Linzer Cookies

  • 3/4 c shortening room temperature
  • 2/3 c sugar
  • 2 aquafaba eggs
  • 1 tsp vanilla essence
  • A drop or two of orange oil
  • 1 1/2 c walnut meal ground walnut
  • 2 c flour Icing sugar for sprinkling
  • Strawberry jam or whatever flavor

Chocolate Pretzels

  • 1 c flour
  • A pinch or two of salt
  • 3 tbsp cocoa powder I ran out my no brand cocoa and added Hershey's - I learned my no brand has darker cocoa, shown on picture
  • 1/2 c shortening
  • 2/3 c sugar
  • 2 aquafaba eggs
  • 1 aquafaba egg for brushing
  • Sugar crystals for sprinkling

Crackle-top Molasses Cookies

  • 2/3 c oil
  • 1 c sugar
  • 2 aquafaba eggs
  • 2 tbsp molasses
  • 2 c flour
  • 2 tsp BSoda
  • 1 tsp cinnamon powder
  • 1 tsp ginger powder
  • 1/3 c sugar for rolling

Tollhouse Cookies

  • 1/2 c shortening
  • 1/4 c sugar
  • 1/2 c coconut palm sugar
  • 1 flax egg
  • 1 aquafaba egg
  • 1 tsp vanilla essence
  • 1 1/8 c flour
  • A pinch or two salt
  • 1/2 tsp BSoda
  • 1/2 c walnuts chopped
  • 1 c semi sweet chocolate chip

Snickerdoodle Cookies

  • 1 c shortening
  • 1 1/3 c sugar
  • 2 aquafaba eggs
  • 3 c flour
  • 1 1/2 tsp cream of tartar
  • 1 tsp BSoda
  • A pinch or two salt

Instructions

Jeweled Christmas Tree Cookies

  • Mix flour and shortening until crumbly texture
  • Add in the rest, knead the soft dough
  • Roll flat and cut with cookie cutter
  • Punch holes all over and a small one on the tip of the tree (if you'd like them as tree ornaments)
  • Place cookies on sheet that is lined with parchment
  • Fill the holes (not the one on the tip of the tree) with crushed candies
  • Preheat oven 350 F, bake for 15-20 mins, cool on sheet
  • Tie a ribbon over the small hole if they are for ornaments!

Linzer Cookies

  • Beat the first 5 ingredients then beat in the rest til combined
  • Divide dough into 2 equal portions and shape them into logs
  • Wrap and chill overnight
  • Preheat oven 325 f, grease baking sheets
  • Slice one log into portions
  • Slice the other log, and punch round or flower shape on the center
  • Bake 10 mins, let stand on sheet for 1-2 mins, then move cookies to parchment or wax paper until cool completely
  • Sprinkle icing sugar on punched cookies, and spread jam on the regular cookies, then sandwich the two cookies

Chocolate Pretzels

  • Cream shortening and sugar, then beat in aquafaba
  • Stir in dry ingredients
  • Form into a ball, wrap and freeze for half hour
  • Take out from freezer and divide into 28 balls (flour your hand if it gets too sticky). Chill balls for 15 mins
  • Preheat oven 375 and grease baking sheet
  • Take out balls and shape into ropes, then turn ropes into pretzels
  • Brush with aquafaba and sprinkle with sugar crystal
  • Bake until firm (about 12 mins) and cool on rack

Crackle-top Molasses Cookies

  • Combine oil and sugar, then beat in aquafaba.
  • Stir in the rest of the ingredients
  • Shape into balls and roll in sugar
  • Preheat oven 350f, bake for 12-14 mins, top will crack
  • Cool on rack

Tollhouse Cookies

  • Cream shortening and sugars
  • Beat in flax, aquafaba and vanilla
  • Blend dry ingredients then stir into shortening mixture
  • Combine choc chips and walnut, then mix into dough
  • Preheat oven to 350 f
  • Grease baking sheet
  • Drop dough by tbsp and bake for 10-15 mins
  • Cool on rack

Snickerdoodle Cookies

  • Beat the first 3 ingredients until fluffy then beat in the rest til combined.
  • Shape into balls and roll in coating
  • Bake on ungreased sheet for 10 mins in preheated oven at 375 F
  • Cool on rack
