Stir together the flour, baking soda and salt; stir to combine, set aside.
In a mixer, beat the vegetable oil, brown sugar and white sugar until smooth and cream. Beat in eggs one at a time, then stir in the vanilla and almond extracts.
Stir in dry ingredients follows with mini chocolate chips
Drop by a tbsp onto ungreased cookie sheets and Bake for 8 to 10 minutes
Cool on racks
Notes
If you have enough cookie sheets, you can let cookies stand on the sheet for 5 minutes before placing on racks for a little firmer cookies. However, for soft melt in your mouth cookies, once out of the oven, cool cookies on rack (gently).
