Mini Choc Chips Cookies


  • 2 1/2 c flour
  • 1 tsp soda
  • a pinch of salt 1/2 tsp
  • 1 c cooking oil
  • 1 c dark brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 tsp pure almond extract
  • 1 generous cup mini chocolate chips


  • Preheat oven to 350 F
  • Stir together the flour, baking soda and salt; stir to combine, set aside.
  • In a mixer, beat the vegetable oil, brown sugar and white sugar until smooth and cream. Beat in eggs one at a time, then stir in the vanilla and almond extracts.
  • Stir in dry ingredients follows with mini chocolate chips
  • Drop by a tbsp onto ungreased cookie sheets and Bake for 8 to 10 minutes
  • Cool on racks


If you have enough cookie sheets, you can let cookies stand on the sheet for 5 minutes before placing on racks for a little firmer cookies. However, for soft melt in your mouth cookies, once out of the oven, cool cookies on rack (gently).
