Biji Salak

Ingredients

  • 2 c packed oven roasted (or steamed), mashed, frozen, thawed pumpkin pure
  • 190 g tapioca starch
  • A pinch of salt
  • 500-750 ml water
  • 1/4 c sugar
  • 1 knotted pandan leaf
  • 1/2 c brown sugar
  • A pinch of salt
  • 2 - 2 1/2 tbsp tapioca or corn starch
  • A little water
  • 1 can of coconut milk
  • Salt to taste
  • 1 knotted pandan leaf

Instructions

  • Mix pureed pumpkin with starch and salt, shape into balls
  • Bring water to boil
  • Drop in balls, cook til floating. Add in brown sugar, pandan, salt, and sugar.
  • Mix corn starch with a little water, pour into pot, stir
  • In a microwave or stove top, warm coconut milk with salt and pandan
  • Serve thickened dumpling (porridge) with coconut milk
