Hungarian Wine Soup (Karacsonyi Borleves)

Ingredients

  • 4 dl whole white pepper
  • 4 dl water
  • 4-5 cloves
  • 1 cinnamon stick/bark
  • a dash of salt
  • 4 egg yolks
  • 3 egg whites
  • 8 dkg sugar
  • 2 dkg flour
  • 6 dkg sugar for egg whites

Instructions

  • Boil wine with water and spices, strain/filter
  • Beat egg yolks, sugar and flour to combine
  • Mix yolk mixture with filtered wine, and bring back to boil and season with a little salt
  • Beat egg whites with sugar until thick meringue like
  • Pour wine soup into wine glass or bowl, add a dollop of meringue and serve
