Boil chilies for 10 mins, drain, place back into pot, pour in new water, boil again for 10 mins, repeat once more
Make paste in a blender, add water if needed
Place paste into a pot, add in other ingredients, bring to boil until thicken in low heat, set aside
Heat nonstick pan, dry fry chicken until changed in color then add in 2-3 heaping tbsp of chill sauce, stir quickly
Add in just enough water and adjust flavor if needed
Cook until chicken is well done
Just before turning off stove, add in cilantro and stir
Serve with warm rice!
