Coconut Rum Balls (Kokuszgolyo)

Ingredients

  • 250 g digestive cookies
  • 50 g dried cherries I love using the tart montmorency from Costco (or you can use raisins)
  • 4 tbsp honey
  • 1 tbsp cocoa powder
  • 50 g butter
  • 1 L milk
  • 4-5 tbsp peach/apricot jam
  • 2 tbsp rum
  • 50 g desiccated coconut unsweetened

For Rolling

  • 100-150 g desiccated coconut unsweetened

Instructions

  • Crush cookies to fine crumbs
  • Add in dry ingredients, mix well
  • Add in milk, honey, stir
  • Add in jam, rum and room temperature butter, stir to combine into paste
  • Roll into balls and chill for 1-2 H then roll into coconut OR you can shape into balls, roll into coconut, and chill
  • Enjoy :)
