Ginger Cookies

Ingredients

  • 2 eggs watch the vlog
  • 1 2/3 c enriched flour
  • 2 tsp ginger powder
  • 1 tsp BP
  • Generous pinch fine sea salt
  • 1/2 c unsalted butter
  • 3/4 c sugar

Instructions

  • Crack an egg in a bowl, beat lightly with a fork
  • Mix dry ingredients in a separate bowl
  • Add in butter, mix until coarse with a fork
  • Add in beaten egg, mix with electric mixer, until just blended
  • Add in sugar, mix with spatula, until completely combined
  • Crack in another egg, mix with electric mixer again
  • Knead with hand, shape into a log
  • Wrap and chill for 30 mins
  • Slice into portions
  • Place onto greased pan
  • Bake on preheated 375 F, 8-10 mins
  • Cool on pan 5 mins, then onto rack to cool completely
