Banana-Blueberry Muffins

Ingredients

  • 1/3 c unsalted butter melted
  • 1 egg
  • 1 small individual tub blueberry Greek yogurt
  • 3 ripe bananas
  • 1 1/2 c enriched flour
  • 1/3 c + 2 tbsp sugar
  • 1 tsp BP
  • 1 tsp BSoda
  • A generous pinch of fine sea salt
  • 1 tbsp chia seeds
  • 1 tbsp flax seeds
  • 1/4 c steel cut oats
  • 3/4 c frozen blueberries
  • Sprinkling sugar optional

Instructions

  • Process melted butter, egg, yogurt, bananas until combined smoothly
  • Mix dry ingredients in a bowl
  • Pour in wet ingredients, followed with chia and flax, blueberries, and oats. Mix until just combined
  • Bake on preheated 375 F for 20 mins
