Ayam Bakar Bumbu Kacang

Ingredients

  • 150 g roasted unsalted peanuts
  • Water as needed enough to make a smooth sauce
  • 3 candlenuts no subs
  • 3 bird eye chilies
  • 5 shallots
  • 5 garlic
  • 3 tbsp Indonesian sweet soy sauce kecap manis
  • Brown sugar to taste you want to achieve a sweet (and spicy) peanut sauce
  • Salt to taste

Instructions

  • Process into smooth sauce, dump onto nonstick pan. Season with brown sugar, salt, sweet soy sauce, and cook until bubbly
  • 1 – 1.5 kg chicken thighs and/or breast, boneless
  • Marinade chicken (and/or sliced eggplants) in the peanut sauce for 15 minutes
  • Grill until cooked (best using charcoal griller!), spraying the chicken/eggplant with oil spray, whenever you turn them to grill the other side.
  • Make sure chicken has clear juice and temperature is about 170 F!
