Vegan Pancake (Waffle)

Ingredients

  • 1 ripe banana mashed
  • 1 3/4 c almond milk
  • 1/4 - 1/2 c corn oil
  • 3 tbsp maple syrup
  • 2 c flour
  • 1 tbsp BP
  • 2 tsp vanilla essence
  • 1 tbsp unsweetened desiccated coconut medium
  • Blueberries for topping
  • Maple syrup for topping

Instructions

  • Mix everything
  • Brush nonstick pan with vegan margarine
  • Pour batter and cook
  • Served topped with blueberries and more maple syrup
