Peanut Butter Cupcakes

Ingredients

  • 1/2 teaspoon ground ginger or 2 cm fresh grated ginger
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups flour
  • 2-3 full tablespoons of crunchy peanut butter
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg beaten
  • 1/2 + 1/3 cup milk

Topping

  • 1/2 cup semi chocolate chips
  • 1 tablespoons of sugar
  • 1 teaspoon of cinnamon
  • unsalted margarine

Instructions

  • Mix flour, sugar, baking powder, salt, cinnamon and ginger.
  • Mix the egg, milk and oil in another bowl, then stir into the dry ingredients to moisten.
  • Add in the crunchy peanut butter, stir well.
  • Spoon into greased or paper lined muffin cups.
  • Bake at 400 degrees for 20 minutes or until done.

Topping

  • Combine the sugar and cinnamon. Brush the tops of the warm muffins with margarine and dip the top of muffin into sugar/cinnamon mixture.
  • Melt 1/2 cup of semi chocolate chips by steaming it. Dip the top of the cupcakes into the melted chocolate chips.
