Bring water to a boil, add a little salt
Boil cabbage and long beans until tender
Take out veggies, place into a large bowl
With the leftover hot boiling water, blanch spinach and bean sprouts
Take out veggies and add them into the bowl
In a food processor, add in onion, garlic, chilies
Pour in 1/4 c water, process into fine mixture
Pour mixture onto a pan, add in kencur, salt and sugar to taste
Bring to boil
Stir in coconut, and mix to combine
Spoon spiced coconut into veggies bowl, mix to combine
Ready to serve
