Very Easy Pumpkin Squares

Ingredients

  • 14 oz pumpkin puree
  • 1 3/4 c sugar
  • 1/2 c oil
  • 3 eggs
  • 1 3/4 c flour
  • 2 tsp BP
  • 1 tsp BSoda
  • 125 g cream cheese room temperature (softened)

Instructions

  • With electric mixer, combine pumpkin, 1 1/2 c sugar, oil, 2 eggs, until well blended.
  • With electric mixer, combine cream cheese, remaining sugar, and the last egg, until well blended.
  • Combine dry ingredients and add into pumpkin mixture, stir well. Pour into prepared pan (greased and floured), spread evenly.
  • Top with cream cheese mixture, and run knife/skewer around to create a marble effect.
  • Bake at preheated 350 F for 30 minutes or until knife inserted in the center comes out clean.
  • Let cool at room temperature before slicing.
