Chocolate Cake with SMBC

SMBC - Swiss Meringue Buttercream

Ingredients

Cake

  • 2 1/2 c flour
  • 2 c sugar
  • 2 tsp Bsoda
  • a pinch or two salt
  • 6 tbsp cocoa powder
  • 1/2 c vegetable oil
  • 1-2 tsp vanilla essence
  • 2 tbsp vinegar
  • 2 c water

SMBC

  • 5 egg whites
  • 1 1/4 c sugar
  • 1 lbs unsalted butter
  • 1 tsp vanilla essence

Instructions

  • Mix dry ingredients
  • Pour in wet ingredients
  • Bake at preheated 350 F until knife inserted in center comes out clean (35 mins)

SMBC

  • On double boiler, mix egg whites and sugar, continuously stirring until mixture hot to the touch, 150 F
  • Beat mixture, low speed, using stand up mixer until room temperature
  • Up speed and keep beating until foamy
  • Beat in butter a little at a time
  • Keep beating until creamy, then beat in essence
  • Cover and decorate cake as you wish :)
