Jeera Chicken

Ingredients

  • 3 tbsp cumin seeds
  • 3 tbsp oil olive is best
  • 1/2 tsp black peppercorns
  • 4 green cardamoms
  • 2 fresh bird eye chilies finely chopped
  • 2 garlic cloves minced/crushed
  • About 2.5 cm ginger root skinned, grated
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • a pinch of salt
  • 8 chicken drumsticks or thighs
  • 1 tsp garam masala

Dipping

  • 1 1/4 c plain yogurt
  • 2 to matoes skinned, seeded, chopped
  • a pinch of salt
  • 1 tbsp chopped fresh coriander optional

Instructions

  • Dry-fry 1 tbsp of cumin seeds for 5 minutes, stirring often. Remove from heat and set aside
  • Heat oil and fry the remaining cumin seeds, peppercorns and cardamoms, stirring often
  • Add in chilies, garlic and ginger, stir to combine
  • Add in the rest of the spices, stir, then add in chicken
  • Cover and simmer for 25 mins
  • Add garam masala and toasted cumin seeds, cook for another 5 mins long
  • serve with yogurt dipping!

Dipping

  • Mix all and chill before serving
