Dry-fry 1 tbsp of cumin seeds for 5 minutes, stirring often. Remove from heat and set aside
Heat oil and fry the remaining cumin seeds, peppercorns and cardamoms, stirring often
Add in chilies, garlic and ginger, stir to combine
Add in the rest of the spices, stir, then add in chicken
Cover and simmer for 25 mins
Add garam masala and toasted cumin seeds, cook for another 5 mins long
serve with yogurt dipping!
