Mix flour, coconut oil, rind, vanilla essence and lemon juice in a stand-up mixer with dough hook attached
Pour in bloomed yeast while keep kneading
Add in fruits, nuts, seeds and chocolates
Cover dough with cling wrap and let stand for an H
Line an 6 inch round pan with parchment paper, bottom and sides
After an hour, shape dough round and place it on the pan. Let stand for 30 mins
Brush top with coconut oil/vegan butter/margarine/shortening and sprinkle with sugar
Bake at 375 F for 45-55 minutes (should sound hollow when tapped)
Cool on cooling rack
