Hungarian fruit dumplings

Ingredients

  • 5 medium size potatoes
  • 2 1/2 c flour
  • Salt 1/4 or 1/2 or even 1 tsp if you like - dumpling is normally tasteless, but sweetened with the fillings and topping
  • 1/2 tbsp sugar
  • 1/3 c fat butter/margarine, df or regular, either works
  • 2 eggs worth aquafaba 6 tbsp

Filling

  • Plums and apricots either or both
  • Sugar as needed
  • Brown sugar as needed
  • Cinnamon powder as needed
  • Water for boiling

Coating

  • 1 tub breadcrumbs
  • 3 tbsp cooking oil

Topping

  • Icing sugar

Instructions

  • Boil potatoes until tender, mash
  • Mix flour, salt, sugar
  • Add in potatoes
  • Add in df butter (or regular)
  • Add in aquafaba (or eggs)
  • Knead
  • Roll flat and cut into portions
  • Halve plums and apricots, remove stones
  • Place 1/2 - 1 tbsp sugar on dough, top with apricot OR place 1/2 - 1 tbsp brown sugar and sprinkle with cinnamon powder, top with plums
  • Seam to seal into balls/rounds
  • Bring enough water to boil, drop dumplings and cook til floating
  • Meanwhile, brown breadcrumbs in cooking oil
  • Once dumplings floating, roll into breadcrumbs
  • Sprinkle with icing sugar before serving
