Boil potatoes until tender, mash
Mix flour, salt, sugar
Add in potatoes
Add in df butter (or regular)
Add in aquafaba (or eggs)
Knead
Roll flat and cut into portions
Halve plums and apricots, remove stones
Place 1/2 - 1 tbsp sugar on dough, top with apricot OR place 1/2 - 1 tbsp brown sugar and sprinkle with cinnamon powder, top with plums
Seam to seal into balls/rounds
Bring enough water to boil, drop dumplings and cook til floating
Meanwhile, brown breadcrumbs in cooking oil
Once dumplings floating, roll into breadcrumbs
Sprinkle with icing sugar before serving
