Indonesian pineapple tart cookies

Ingredients

Filling

  • 1 ripe pineapple
  • 1/4 c sugar
  • 1 cinnamon stick
  • A pinch salt

Cookies

  • 1 c icing sugar
  • 1 c vegetable oil
  • 3 c flour
  • 2 tbsp cornstarch
  • Cloves optional
  • Yellow food coloring optional
  • Vegan eggwash or regular eggwash optional

Instructions

Filling

  • Grate pineapple
  • On non stick pan, mix grated pineapple, sugar, cinnamon stick, and a pinch of salt
  • Cook on high til bubbly then lower to medium low heat, keep stirring until no more liquid and mixture is moldable
  • Cool completely before shaping into balls

Cookies

  • Mix oil and icing sugar in a bowl
  • Mix flour and cornstarch on a separate bowl, then mix mixture into wet ingredients, knead
  • Pinch dough, flatten it, place a ball of filling, seam to seal into a round or whatever shape you wish
  • Place a clove on top
  • Bake on preheated 350 F convection oven for 12 mins
  • Cool on rack completely
