Hungarian Cheesecake (Gyumolcsos Turotorta)

Ingredients

Base

  • 4 eggs separate
  • 4 tbsp flour
  • 4 tbsp sugar
  • a pinch of baking soda

Cheesecake

  • 250 g turo if not, German quark
  • 150 g icing sugar
  • 2 tbsp sour cream
  • 2 envelopes vanilla sugar such as Dr. Oetker
  • grated of 1/2 lemon peel
  • 2 dl heavy cream
  • 1 handful raisins
  • 1 dl water
  • 1 envelope gelatin powder

Topping

  • Any kinds of fresh fruits you wish
  • An envelope of tortazsele or express gelatin such as from Dr. Oetker

Instructions

Base

  • Beat egg white til fluffy
  • Beat the other ingredients (for base) to combine, then fold in egg white foam
  • Bake on 350 F for 15--20 minutes, cool to room temperature before proceeding

Cheesecake

  • Beat cheesecake ingredients
  • Bring to boil water and gelatin, cook til dissolved, cool to room temperature
  • Beat heavy cream til fluffy
  • Fold in gelatin, whipped cream into cheesecake mixture
  • Sprinkle base with raisins then pour cheesecake mixture
  • Chill in the fridge til set, at least 4-6 H
  • Take out cheesecake from fridge, decorate with fresh fruits

Topping

  • Prepare tortazsele as instructed on the package and pour over fruit, slice and serve!!
