Pumpkin Madeleines

Ingredients

  • 1 c flour
  • A generous pinch of salt
  • Freshly grated nutmeg a tiny pinch
  • 1/2 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp allspice powder
  • 1/4-1/2 tsp BP watch the vlog!
  • 50 g unsalted butter
  • 2 eggs
  • 1/2 c sugar
  • 1 tbsp vanilla essence
  • 1/4 c pumpkin puree
  • Additional: chopped walnut chocolate chips, if using
  • Toppings: white chocolate hazelnut chocolate, sprinkles, if using

Instructions

  • Mix dry ingredients in a bowl
  • Whip eggs, sugar, and vanilla essence until fluffy
  • Fold in pumpkin puree
  • Stir in dry ingredients into wet (if adding walnut or choc chips or a mix of both, here is the time as well)
  • Fill in greased mold for 3/4 full
  • Bake on preheated 8-10 mins, cool on rack
  • If using topping, do it after madeleines are at room temperature.
