Sourdough Bread

Ingredients

Levain

  • 1 tbsp sourdough starter
  • 100 g bread flour
  • 100 g water

Bread

  • Levain
  • 1 kg bread flour
  • 700 g water room temperature
  • 20 g salt
  • 50 g water

Instructions

  • Mix levain ingredients, cover with cling wrap. Let stand room temperature overnight
  • Mix flour, water, and levain with wooden spoon (it will be sticky)
  • Cover and let stand for an H
  • Knead in salt and water
  • Cover and rest for an H
  • Folding time set (3 times per set), every 30 mins - repeat 4 times
  • Rest 4 H
  • Divide into two
  • Shape to round
  • Rest 20 mins
  • Fold, shape
  • Place into bowls, lined with tea towels and floured generously
  • Chill overnight
  • The next day, take out from the fridge
  • Score with razor
  • Bake covered, preheated 450 F, 30 mins
  • Then bake uncovered, 20 mins
  • Rest then slice
