Mix flour, water, and levain with wooden spoon (it will be sticky)
Cover and let stand for an H
Knead in salt and water
Cover and rest for an H
Folding time set (3 times per set), every 30 mins - repeat 4 times
Rest 4 H
Divide into two
Shape to round
Rest 20 mins
Fold, shape
Place into bowls, lined with tea towels and floured generously
Chill overnight
The next day, take out from the fridge
Score with razor
Bake covered, preheated 450 F, 30 mins
Then bake uncovered, 20 mins
Rest then slice
