Carrot Spinach Muffins

Ingredients

  • 1 large carrot process in a blender
  • 1 frozen spinach nugget thaw
  • 30 g frozen rhubarb give a quick rinse
  • 1/4 c non dairy Choc chips
  • 1 banana mashed
  • 1 tbsp flax ground
  • 3 tbsp black bean aquafaba
  • 1 c flour
  • 2 tbsp oil
  • 1/4 c sugar
  • 1/2 tsp BP
  • 1/4 tsp BSoda

Instructions

  • In a bowl, mix mashed banana, sugar, aquafaba, flaxseed, and oil
  • Add in flour, BP, BSoda, stir a bit
  • Add in carrot, spinach, rhubarb and choc chips
  • Preheat oven 350 f
  • Bake for 25 mins
  • Cool on rack
