Lime Madeleine

Ingredients

  • 1 c presifted AP flour
  • 2 tbsp tapioca flour
  • 1 l4 c + 2 tbsp sugar
  • 1 tsp BP
  • A pinch of salt
  • 1/4 c vegan butter/margarine melted
  • 1/2 c almond milk
  • 1/4 c lime juice
  • 1/2 tsp clear vanilla essence

Instructions

  • Preheat oven 400 F
  • Mix dry, make a well in center, pour in wet and mix right away to combine
  • Spoon 1-2 tbsp batter into greased and floured Madeleine mold
  • Place tray into oven and right away lower temperature to 350 F
  • Bake for 20 mins (until toothpick inserted comes out clean)
  • Cool on rack
