Dugo

Ingredients

  • 200 g sticky rice/glutinous rice/short grain rice
  • 100 ml thick coconut milk
  • 25 g sugar
  • 1/3 c desiccated coconut unsweetened
  • a pinch of salt
  • 1 ripe plantain
  • banana leaf and fragrant leaf screwpine leaf as needed.

Instructions

  • soak sticky rice in cold water for 2 H
  • drain and rinse
  • line your steamer with banana leaf and dump rice in. Steam for 30 minutes
  • pour coconut milk into a pot and stir in rice
  • cook on low-medium heat just until coconut milk is soaked into rice
  • slice plantain in half. Mash one side and cube one side
  • mix in mashed plantain, followed with sugar, coconut, salt, then cubed plantain
  • grab a piece of banana leaf, place a piece of screwpine leaf, then scoop in 1/2 c rice on the leaf. Wrap and secure.
  • steam Dugo for 30 minutes
