Hungarian Zucchini Stew

Ingredients

  • 1 large zucchini you can skin it or not, grate/chop/diced
  • 1 large onion
  • 6 garlic
  • 1 tbsp olive oil
  • 1 small plate fresh/frozen dill chopped (makes 4 heaping tbsp)
  • Vegeta powder to taste
  • Water as needed

To Finish

  • 1 c water
  • 3 tbsp flour
  • 1 heaping tbsp chopped dill
  • 1/2 tsp smoked paprika powder

To Serve

  • Vegan sour cream optional
  • Toast optional
  • Breaded vegan chicken Gardein, optional

Instructions

  • Heat oil saute garlic and onion, followed with dill
  • Stir in washed grated zucchini, cook til soften, adding water a little at a time, as needed (30-45 mins)
  • Once soften, mix flour into water and pour into the pot, to thicken
  • Adjust taste, then add in more dill
  • Stir in paprika powder
