Medley Biryani

Ingredients

Spice Powder

  • 4-5 cloves
  • small tip of nutmeg
  • 2 white cardamom
  • 2 star anise

Biryani

  • 1 stick of cinnamon
  • 2 Indonesian bay leaf daun salam
  • 4-5 green cardamom
  • 1 tsp coriander ground
  • 1/2 tsp cumin ground
  • 1/8 tsp turmeric ground
  • 1 c almond milk
  • 20 cashew in food processor, turn into rough ground cashew
  • 2 handful raisins
  • 6 c cooked medley mixture of rice, barley, split yellow and green peas - usually for minestrone soup
  • 3 tsp tomato paste
  • 2 tbsp olive oil
  • 1 onion
  • 2 garlic
  • 1/2 tsp minced ginger
  • salt to taste

Acar

  • Cucumber cut into sticks
  • Carrots julienned or diced
  • 1 small onion sliced
  • 3 garlic thinly sliced
  • Bird eye chilies leave whole
  • Enough water
  • Vinegar to taste
  • Sugar to taste
  • Salt to taste

To serve

  • pickles
  • coriander leaf
  • lemon/lime juice
  • fried shallots bawang goreng

Instructions

  • In food processor, process spices into powder
  • Heat oil, saute spices, onion, garlic, ginger
  • Stir in medley, rough ground cashew, raisin, tomato paste
  • Season with salt and pour in milk
  • Cover lid, cook on high until steam starts coming out. Lower heat to super low, and cook for another 5-8 mins
  • Release steam completely before removing lid

Acar

  • Mix everything and chill for 2 H

To serve

  • Serve biryani with acar
  • Enjoy ?
