Bihun Goreng

Ingredients

  • 1 bag of rice vermicelli noodle
  • 2 whole eggs
  • 3 tbsp peanut oil/unsalted butter
  • 1 carrot sliced thinly
  • Half a cabbage slice
  • 250 g skinless boneless chicken breast, cubed
  • 1/3 c chicken broth/water
  • Sweet soy sauce to taste
  • Chicken bouillon powder to taste,
  • White pepper powder to taste
  • 2 tbsp crushed chives

Instructions

  • First you’re gonna boil enough water, place the vermicelli into a bowl, pour hot boiling water, let soak until soften for 5 mins, drain
  • On non stick pan, saute the chicken breasts on low-medium heat, until half cooked, spoon chicken on to the side, add butter or peanut oil, then crack the eggs, scramble.
  • Add cabbage and carrots, stir. Pour in broth/water, cover with lid. Cook until veggies softened.
  • Add in softened vermicelli, season with the rest of the ingredients. Adjust flavoring
  • Serve immediately, top with more crushed chives and/or fried onion.
