sweet potato dumplings

Ingredients

  • 180-200 g yams/sweet potato steam then mash
  • 150 g glutinous rice flour
  • 3 tbsp cornstarch
  • a generous pinch of salt
  • coconut palm sugar as needed (or brown sugar)
  • enough water for boiling

Coating

  • 1/2-3/4 c unsweetened desiccated coconut
  • 1/2 tsp salt adjust to your liking, the coating should be slightly salty
  • 1/2-1 tbsp water

Instructions

  • bring enough water to boil
  • mix dry ingredients then knead in hot mashed yams until pliable
  • take about 1-2 tbsp dough, flatten, and place coconut sugar in center, seam to seal and shape into balls
  • drop balls into boiling water and cook until floating (about 8-10 mins)
  • meanwhile, mix coconut, water, salt and microwave for 1 min
  • take out balls with slotted spoon and roll on coconut
