Stir well water, honey, maltose, salt in a bowl
In another bowl, dissolve yeast in water
Once yeast is proofed, combine with maltose water then add in 1/2 cup of flour, stir with wooden spoon to a thick mixture
In a separate bowl, place 1/2 cup flour and pour a sum of thick mixture into it, knead. Add another 1/2 cup of flour, knead, and then pour the rest of the thick mixture, and knead more. Pour all of this into the bowl where you had the thick mixture, and knead there, this way you don't waste any.
If its needed, while kneading, you can add the leftover of 1/2 cup, little by little (see how much you will need it)
Divide dough into 6-8 portions and shape into bagel by making a hole in the center of each portion
Let rest for half hour to rise
Dissolve baking soda into the water in a pot, and let simmer
Drop bagels for 1 minute, flip with slotted spoon and simmer for another 1 minute
Place bagels on baking sheet, sprinkle with coarse salt
Bake on preheated 375 F for 20 minutes
Serve immediately.
