Beef Rendang

Ingredients

  • 2 kg beef cubes
  • 1 medium large onion
  • 3 large shallots
  • 5 garlic
  • 1 tbsp pepper flakes
  • 1-2 cm ginger root
  • 1-2 tsp ground turmeric
  • 2 tsp ground coriander
  • 1-2 tsp garlic powder
  • salt as needed
  • 2 stalks of lemongrass
  • 5 kaffir lime leaves
  • water as needed
  • cooking oil as needed
  • coconut powder 1-2 cups
  • 1/2 tbsp brown sugar or as needed

Instructions

  • Place all ingredients into a food processor, add in amount of oil, blend to mix into a fine paste
  • Heat oil in a wok, brown meat lightly, set aside
  • Preheat the wok, saute the fine paste, add in lime leaves and lemongrass
  • Add in beef and a bit of water and mix well, bring to boil
  • Add in coconut powder and more water as needed
  • Cook until tender, thickened, caramelized
